Caramelized Lemongrass Chicken
1 lb of chicken
1 tsp minced garlic
1 tsp chopped fresh chili
1 Tsp chopped fresh lemongrass
2 Tsp fish sauce
2 Tsp brown sugar
1/2 cup chicken stock
1 Tsp canola oil
1 tsp chopped basil leaves
2 scallions cut into 2 inch length
In a mixing bowl, combine sugar, fish sauce, and chili. Mix until the sugar is dissolved. Add the chicken and mix well. Marinate the chicken for 15 minutes. Heat a 2-quart pot. Add oil, garlic and lemongrass. Stir until the garlic turn to light brown, add the chicken. Stir well, add the chicken stock. Bring to a boil and then lower the heat. Simmer until liquid reduce to half, about 8 minutes. Garnish with chopped basil and scallions.
