Grilled Chicken Medley Madness
2 tablespoons vegetable oil
1 cup red pepper, 2 inch strips (1 medium)
2 cups onions, 2 inch chunks
1-1/2 cups Mr. Yoshida’s® Fine Sauces Cracked Pepper & Garlic Sauce, divided
1-1/2 pounds chicken breast, boneless and skinless
3 cups sweet potatoes, cut lengthwise and sliced 1 inch thick (approximately 2 ea)
Salt and pepper
8 medium mushrooms, halved
2 cups zucchini, cut lengthwise and sliced 1 inch thick
Place chicken in a resealable bag with 1/4 cup Mr. Yoshida’s® Sauce and marinate for 30 minutes. Place vegetables in a separate resealable bag with oil and season with salt and pepper and marinate for 30 minutes. Grill chicken for 5 minutes on each side or until juices run clear and internal temperature is 165 degrees, baste chicken using 1/2 cup Mr. Yoshida’s® Sauce during grilling. Remove and set aside to keep warm.
Place vegetables in grill basket or on a broiler pan and grill or broil for 10-15 minutes till vegetables are tender crisp. Slice chicken breast and toss together with vegetables and remaining 3/4 cup Mr. Yoshida’s® Sauce. Serves 4.
